First! Objective measurement of coagulating enzymes kinetics
The CoAguLab monitoring system provides a consistent and repeatable optically based method for measurement of the kinetics of milk coagulating enzymes. The instrument is conveniently equipped with two measuring cells for paired testing. It was specifically designed to provide excellent temperature control for accurate determination of the milk-clotting activity of rennet, in compliance with the IDF and ISO standards. The system monitors temperature, light backscatter and pH (optionally) for each vat. Determination of the enzymatic reaction rate of the coagulating milk, with simultaneous monitoring of pH and temperature, gives this technology the ability for rennets, assessment of new starters, rennets and cheesemaking additives. It also assists with accurate testing of innovative processing conditions for dairy products development or for cheesemaking efficiency improvement. Time based parameters are generated from the light backscatter profile obtained during testing. ![]() CoAguLab Technical Specifications
The CoAguLab package includes the water-jacketed coagulation vats; an electronic enclosure; CoAguLab data acquisition software; and hoses for connection to a water bath. The water bath and pH measurement system for each vat may be supplied optionally as well as a computer.
Thermistors are located in the bottom of each vat for a precise sample temperature measurement. A fiber optic unit penetrates each vat from the side. An optional pH probe is positioned in the cap.
